Coffee is known for its variety of flavors. While wine is composed of around 400 different flavors, coffee boasts more than 800, making it one of the most complex natural products in existence. But how do you find the best coffee for you?
To answer this question, you need to take a closer look at the beans. Important factors include the variety or genus, the origin, and the roasting.
genus
There are a total of 103 known varieties of coffee. Interestingly, only two varieties, namely Coffea Arabica and Robusta, are used commercially. Coffea Arabica is a hybrid of Coffea eugenioides and Coffea canephora and accounts for 60 to 70 percent of the market share, while Robusta, a subspecies of Coffea canephora, accounts for between 30 and 40 percent of the market share. But what are the differences between the two varieties?
Origin
Countries such as Guatemala, Brazil, and Ethiopia are known for their Arabica beans, which are characterized by their curved scar on the flat side. Compared to Robusta coffee, Arabica coffee has a milder and more nuanced flavor. Furthermore, growing conditions influence the taste of coffee, similar to wine. Factors such as temperature, rainfall, sunlight intensity, and soil conditions during the harvest season contribute to the flavor. Arabica coffee is very popular worldwide due to its diverse flavors. Robusta coffee, on the other hand, has a nutty, cinnamon, and slightly bitter taste with cocoa notes. Although the oil content in Robusta coffee is lower than that of Arabica, it forms a richer crema due to its lower fat content. However, when Robusta coffee is blended with high-quality Arabica, the result is a round and full-bodied body. Robusta coffee is very resilient and thrives even in harsh climatic conditions. It is mainly produced in countries such as Mexico, India and Indonesia.
Roasting
The most important step in coffee production is undoubtedly roasting the beans, as otherwise these raw beans would be inedible and unusable. The roasting process largely determines the taste of the coffee, and aromas and nuances are highlighted or even filtered out. There are officially six different roast levels, ranging from light to dark. During the roasting process, the amino acids and sugars are dissolved and recombinated. Even the smallest changes during the roasting process can lead to a completely new and unknown taste. The combination of the resulting aromas and flavors creates the unique taste of the coffee. Of course, we roast all our coffees in small drum roasters so that we can influence all roasting parameters and guarantee consistently high quality.
